In order to preserve the fish brought from the Atlantic, it is seasoned and left to dry in the cold Castilian air. The fillet of the small sardine is cleaned by hand, then preserved in oil and left to dry for a few days. This fish has a similar colour to anchovies, but with a more brilliant hue. Its texture is fleshy and relatively firm. Its taste is characteristic but not intrusive with salty notes.
