Tortilla Soup with Goat CheesePreparation time: 15 - 25 minutes

Ingredients for 2 servings:
- 450 г Tomato sauce Cirio
- 50 г Ile de France goat's cheese or Landana goat cheese
- 100 ml Olive oil Costa d'Oro or Colavita
- 2 Mexma Tortilla
- 3 Radishes
- 100 g Garlic
- 1 avocado
- 1 Lime
- 1 Onion
- 50 g Parsley
- 10 g Spices (cumin, chilli, paprika, oregano and coriander)
Preparation of products:
Heat the oven to 250°C. Cut the lime into 4 pieces, cut the tortillas into 1 cm strips. Peel and chop the onion. Peel and mash the garlic onions. Peel and cut the avocado into small cubes (spray the avocado with a little lemon juice to prevent it from darkening). Cut off the turnip roots and cut them into rounds. Cut the goat's cheese into small pieces. Chop the parsley.
Preparation of the cakes:
Put the tortilla slices with a little olive oil to toast evenly for about 10-12 minutes.
Preparation of vegetables:
While the tortilla chips are baking, heat 2 tablespoons olive oil in a medium skillet, add the onion, garlic and remaining spices, add salt and pepper to taste. Stir for 3-5 minutes until you feel the full flavor of all the ingredients mixed together.
Soup preparation:
Add tomato sauce and 2 cups water to all ingredients. Cook over low heat 8-10 minutes or until soup is thickened. Once off the heat add the remaining lemon juice. Add salt and pepper if needed.
Finish and serve the dish:
After serving, sprinkle some of the tortilla chips, avocado, radish and goat cheese into a bowl.
