Ramekins with blueberries, raspberries, plums and cream Elle&vire

  • 100 g Blueberries
  • 6 Plums
  • 100 g Raspberries
  • 60 g Sugar
  • Powdered sugar
  • Sham peanuts
  • 20 g Shredded coconut
  • 10g Finely grated lime zest
  • 20 g Raisins
  • Almonds (sliced)

Preparation of the mixture
Mix the cornstarch into the cold milk. In a large bowl, whisk the eggs and sugar until the mixture turns white. Add the cornstarch mixture and the cream. Mix well

Preparation of the ramekins:
Cut the plums in half, remove the pits and then cut them into quarters. Place the blueberries in two bowls (ramekins), the raspberries in two others and finally the four plums in two more. Sprinkle the fruit with one tablespoon of sugar per bowl. Pour the mixture of cream, milk and eggs without overfilling the ramekins. In the remaining cream/milk/egg mixture, add the grated coconut, lime zest, raisins and fill the last two ramekins. Preheat the oven to 150 °C.

Scatter the almond flakes over the raspberry ramekins and the crushed pistachios over the cranberries. Sprinkle the plum ramekins with icing sugar.

Bake in the oven for 20/25 minutes and enjoy!
