Braised Vegetables with Beans on TortillaPreparation time: 20 min

Ingredients for 2 servings:
- 50 г Boiled Italian beans
- 200 г Goat cheese
- 50 ml Cooking cream
- 4 pcs Tomato tortilla or Tortilla
- 200 g Beetroot
- 20 g Garlic
- 1 green lemon
- 1 Onion
- 20 g Parsley
- 2 roasted red peppers
- 7 g Red pepper
- 40 г Olive oil Costa d'Oro or Colavita olive oil
Preparation of products:
Preheat the oven to 200°C. Wash and dry the products. Finely chop the onion and garlic. Cut the beetroot into strips by removing the stem. Cut the lemon into 6 and chop the peppers and parsley.
Preparation of the cakes:
In a baking dish, toast the tortillas in the oven for 2-4 minutes lightly drizzled with olive oil. After removing from the oven immediately season with salt and pepper.
Preparation of vegetables:
Cook the vegetables in a pan with 2 tbsp olive oil. First fry the onion and garlic for about 4 minutes and then add the beetroot. Season with salt and pepper.
Then add the beans, red peppers and red pepper and you can mash the beans a little with the fork. Pour cream over the beans.
Finish and serve the dish:
Top a tortilla with the mixture, sprinkle with goat cheese, squeeze lemon juice and sprinkle with parsley.
